Idichakka thoran is made from very tender jackfruit or idichakka that has been boiled.
Take a very tender jackfruit, peel it, chop it into small pieces and cook with salt and turmeric powder. Pound it well. Splutter some mustard seeds and along with it, fry some urad dal. Then add the pounded jackfruit, saute and mix in the customary thoran base (grated coconut, cumin seeds, garlic, turmeric and chilli powder or green chillies pounded together) to get your Idichakka thoran.
