Rice powder – ½ Kg
Sugar – 1 cup
Oil - as required for frying
Salt – a pinch
Sesame seeds – 2 tsp
Cumin seeds – 1 tsp
Egg – 2 nos
Thick coconut milk – 2 cups

Method of Preparation:

Strain rice powder. Powder the sugar. Mix rice powder and coconut milk. Add this to the whisked egg. Add powdered sugar to it and mix well, without forming lumps. Add salt, cumin seeds, sesame seeds and mix well. It should be of medium consistency. In a thick bottomed pan, add oil and let it boil. Into this immerse the instrument/mold for preparing achappam. Immediately dip it in the batter up to ¾ th of its length and again immerse it in hot oil. We can see that the batter gets separated in the hot oil. Fry both the sides well.
(Do not immerse the mold fully in the batter)
