Bilimbi Pickle


Cleaned Bilimbi – 2 cups
Green chilies slit into 2 – 10 nos
Chopped garlic – 2 tsp
Chili powder – 3 tsp
Dates – 10 nos
Turmeric powder – ½ tsp
Asafoetida – 1 tsp
Salt – as required
Gingelly oil – ¼ cup
Curry leaves – as required
Vinegar – ½ cup
Sugar – ½ tsp

Method of Preparation:

Marinate Bilimbi in salt and sun-dry it for 2 days. In a bowl, mix vinegar and dry curry powder (chili, turmeric, asafoetida). In a pan add oil and to this add bilimbi, green chilies and dates. Sauté well. Add vinegar mixture and sugar to it. Mix well and store it in an air tight container.
