Chicken Varuval


Chopped chicken – ½ Kg
Chopped onion – ½ cup
Chopped tomatoes – ½ cup
Turmeric powder – ½ tsp
Kashmiri chili powder – 1 tsp
Curry leaves – as required
Coriander leaves – as required
Dried red chilies – 6 nos
Diced dry coconut – 4 tsp
Cinnamon - 2 sticks
Cloves – 4 nos
Cardamom – 3 nos
Coriander seeds – 3 tsp
Fennel seeds – ½ tsp
Chopped ginger and garlic – 1 tsp each
Salt – as required
Oil – as required

Method of Preparation:

In a thick bottomed pan, add 6 tsp of oil. Add ginger and garlic, onion, tomatoes, dried red chilies, curry leaves and sauté till it turns brown. Add chicken pieces, turmeric powder, chili powder, diced coconut and salt. Sauté well. Grind all the garam masala (cinnamon, cloves, cardamom, fennel seeds) along with coriander seeds. Add this paste to the chicken pieces and sauté till the raw smell goes off. Cook with the lid closed. Let the water reduce completely. Add curry leaves and coriander leaves to it and mix well.
