Chicken with Vegetables


Chicken cut in medium size – ½ Kg
Ginger-garlic paste – 3 tsp
Diced carrot – ¼ cup
Diced beans, potatoes and capsicum – ¼ cup each
Green peas – ¼ cup
Diced onion – ¼ cup
Sliced green chilies – 4 nos
Pepper powder – ½ tsp
Diced tomatoes – ¼ cup
Coconut oil – ¼ cup
Turmeric powder – ½ tsp
Chili powder – 1 tsp
Coriander powder – 3 tsp
Masala powder – 1 tsp
Curry leaves – as required
Coriander leaves – as required
Salt – as required
Water – as required

Method of Preparation:

In a pan, add 3 tsp of oil and sauté all the vegetables. To this add ginger, garlic, curry leaves and chicken pieces, along with salt and dry curry powders (pepper, turmeric, chili, coriander, masala). Cook with the lid closed. Let the gravy thicken with chicken and vegetables. Garnish with coriander leaves.
