Egg Stew

Ingredients:

Boiled egg – 6 nos
Diced potatoes – ½ cup
Diced onions – ½ cup
Big chilies – 4 nos (slit into 4 pieces)
Diced carrots – ¼ cup
Cinnamon – 2 sticks
Cloves – 4 nos
Fennel seeds – 1 tsp
Cardamom – 4 nos
Chopped ginger – 1 tsp
Chopped garlic – 1 tsp
Coconut oil – as required
Salt – as required
Ghee – 1 tsp
thin Coconut milk – 1 cup
thick Coconut milk – 1 cup
Curry leaves – as required

Method of Preparation:

Sauté all the vegetables (potatoes, onions, carrots) along with 3 tsp of oil, ginger, garlic, green chilies, cardamom, cinnamon and cloves. To this mix add thin coconut milk and cook. Add a pinch of salt and let the gravy thicken. Now add thick coconut milk and boiled eggs along with 1 tsp of ghee.
