Maida – 1 cup
Egg – 1 no
Water - as required
Grated coconut – 2 cups
Sugar – 4 tbsp
Cardamom powder – ¼ tsp
Turmeric powder – ¼ tsp
Salt - as required
Roasted cashew nuts – 10 nos
Roasted raisins – 15 nos

Method of Preparation:

Make sugar syrup by boiling sugar and water. To this add coconut and mix till it becomes thick. This is the mixture for filling. Beat egg in a bowl. Add maida and salt to this along with required amount of water. Mix well. Place a dosa pan on flame. Pour a spoon of this batter into the pan (spread ghee on the pan and then pour). Now cook it. Place a spoon of filling in its center and then roll it. Do the same with the remaining batter and filling mixture. Tasty elanchi is ready.
