Kerala Style Duck Curry

Ingredients:
 
Cleaned duck pieces – 1 Kg
Coconut oil – ¼ cup
Chopped onion – 1 cup
Chopped ginger – 2 tsp
Chopped garlic – 3 tsp
Green chilly slit into two – 8 nos
Vinegar – 2 tsp
Coriander powder – 3 tsp
Chili powder – 2 tsp
Turmeric powder – ½ tsp
Pepper powder – ¼ tsp
Cinnamon – 2 sticks
Cloves – 6 nos
Cardamom – 3 nos
Fennel seeds – 1 tsp
Coconut thin milk – 3 cups
Coconut thick milk – 1 cup
Diced potatoes – 1 cup
Mustard seeds – ½ tsp
Salt – as required
Dried red chilies – 3 nos
Curry leaves – as required
Ghee – 1 tsp
Shallots cut into round pieces – 3 tsp
 
 
Method of Preparation:
 
Grind garam masala (cinnamon, cloves, cardamom, fennel seeds) and dry curry powders (turmeric, pepper, chili). In a thick bottomed pan, add 4 tsp of oil. Add onions, ginger, garlic, green chilies and sauté well. Add the ground mixture, duck pieces, vinegar, potatoes and thin coconut milk. Cook well till the gravy thickens. Add thick coconut milk to it. In another pan, add ghee and 1 tsp of oil. Splutter mustard seeds and add shallots and curry leaves. Sauté well and add it to the curry. Tasty duck curry is ready.
