Cucumber Kichadi


Chopped cucumber – 2 cups
Big Chili (Thondan mulaku) – 6 nos
Grated coconut – 1 cup
Cumin seeds – 1 tsp
Shallots – 4 nos
Mustard seeds – 1 tsp
Dried red chilies – 4 nos
Curry leaves – as required
Salt – as required
Set curd – 1 cup
Oil – as required

Method of Preparation:

Boil cucumber in water. Cook it properly till the water reduces. Grind coconut, chilies, shallots and cumin seeds well. Add this to the cucumber. Let the mixture cool down. Add curd to it. In another pan, heat oil. Splutter mustard seeds in it. Add dried red chilies and curry leaves. Take it out from the flame and add this to the cucumber kichadi.
