Kootu Thoran


Chopped carrot – ¼ cup
Chopped beans – ¼ cup
Chopped onion – ¼ cup
Chopped green chilies – 6 nos
Garlic – 4 pods
Cumin seeds – 1 tsp
Chopped cabbage – ¼ cup
Turmeric powder – ¼ tsp
Salt – as required
Mustard seeds – as required
Oil – as required
Curry leaves – as required
Urad dal – 1 tsp

Method of Preparation:

In a pan add oil and splutter mustard seeds and urad dal. Add dried red chilies and curry leaves. To this add the chopped vegetables. Add salt, turmeric powder and required amount of water to the mixture. Close the lid and cook until the water reduces. Add chopped onion to this. Now add coarsely ground mix of coconut, cumin seeds and green chilies. Mix well and let it cook with the above mixture of vegetables. Sauté till the water reduces completely.
