Kuttanadan Special Duck Stew


Clean duck – 1 Kg
Diced onion – 2 cups
Diced shallots – ¼ cup
Sliced ginger – 1 tsp
Sliced garlic – 2 tsp
Coriander powder – 2 tsp
Turmeric powder – ½ tsp
Garam masala powder – 1 tsp
Salt – as required
Vinegar – 1 tsp
Coconut thin milk – 3 cups
Coconut thick milk – 1 cup
Ghee – 2 tsp
Mustard seeds – ½ tsp
Big Green chilly – 6 nos
Coconut oil - ¼ cup
Curry leaves - as required

Method of Preparation:

In a pressure cooker, add coconut oil. Add chopped shallots, mustard seeds and curry leaves. Add onions, green chilies, ginger, garlic and salt. Sauté well. Add the duck pieces, vinegar and thin coconut milk. Cook well. To this add dry curry powders (coriander, turmeric, garam masala) – heated. Let the gravy thicken. Add thick coconut milk and curry leaves. Add 2 tsp of ghee at the end. Tasty stew is ready.
