Bitter gourd Fry

Bitter gourd sliced thinly in round shape (soak in salt water for 10 minutes) – 2 cups
Coconut bits (sliced in one inch length) – ¼ cup
Green chili slit to two – 4 nos
Chili powder – ½ tsp
Turmeric powder – ¼ tsp
Salt – as required
Oil – as required
Mustard seeds – ½ tsp
Method of Preparation:
In a thick bottomed pan, add 4 tsp of oil and splutter mustard seeds. Add curry leaves, bitter gourd, salt, green chilies and dry curry powder (chili, turmeric). Sauté well and cook with the lid closed. Cook on low flame. Be careful not to burn it. Add coconut bits. Sauté till coconut turns golden brown.
