Potato Koottu Curry

Diced potatoes – 3 cups
Shallots – 10 (whole)
Urad dal – ½ cup
Turmeric powder – ¼ tsp
Coriander powder – 2 ½ tsp
Chili powder – 1 tsp
Crushed ginger – 1 tsp
Garam masala powder – 1 tsp
Mustard seeds - 1 tsp
Dried red chilies – 3 nos
Curry leaves – as required
Coconut thin milk – 2 cups
Coconut thick milk – 1 cup
Salt – as required
Oil – as required
Method of Preparation:
Soak urad dal in water for 1 hour. Strain it and grind it (like vada batter). Add a pinch of salt and shape it like small vadas and fry it. In a pan add potatoes and shallots. Add required amount of water and let it cook. (Cooking in thin coconut milk makes it tastier). To the cooked potato add dry curry powders (turmeric, coriander, chili, garam masala) and sauté well. To this add thick coconut milk. In another pan add oil and splutter mustard seeds. Add dried red chilies and curry leaves. Add this mixture to the curry along with the prepared vadas.
