Tomato Aviyal


Sliced tomato with thick skin – ¼ kg
Sliced Drumstick - 1 no
Sliced onion – 1 cup
Sliced green chilies – 4 nos
Grated coconut – 1 cup
Chili powder – ½ tsp
Turmeric powder – ¼ tsp
Cumin seeds – ½ tsp
Curry leaves – as required
Shallots – 4 nos
Salt – as required
Coconut oil – as required
Water – as required

Method of Preparation:

Grind coconut, cumin seeds, shallots and curry leaves. Mix this with the vegetables along with salt and ¼ cup of water. Cook it with the lid closed. Let the water reduce completely. Add curry leaves and 2 tsp of oil.
