Kerala Culture



Ripe plantain banana – 2 nos
Grated coconut – 1 cup
Ghee – 5 tsp
Crushed cardamom – 2 tsp
Raisins – 2 tsp
Chopped Cashew nuts – 50 gm
Bread crumbs – as required
Sugar – as required
Egg – 3 nos
Oil – for frying

Method of Preparation:

Steam banana and mash it. In a pan, heat ghee, add cashew nuts and raisins and fry till it turns brown. Remove it from the ghee. Add coconut to this and fry it. Remove the mixture. Beat egg with sugar and cardamom. Add this to a hot pan and scramble it. Add mashed banana to the coconut mixture. Rub ghee on your hands and flatten it. Mix the egg mixture, cashew nuts and raisins separately. Place this in the center of the banana and cover the edges completely. Roll it to an oval shape like Unnakai. Beat egg whites. Dip the unnakai in egg whites and cover it with bread crumbs. Fry this in hot oil.
