This is a paayasam or kheer – a dessert – made with vermicelli (thin form of rice noodles).
Break the vermicelli into small pieces. Fry in ghee, to a golden colour. Cook the fried vermicelli in some boiling water. When it is cooked, add cow’s milk and bring to boil once more. Allow to boil for some time and then add crushed cardamom, and roasted cashew nuts and raisins. Mix well, remove from the flame and allow to cool before using.
