Erissery

Ingredients

Soaked red oriental beans 1 cup
Pumpkin 1 cup
Elephant foot yam 1 cup

To make a paste

Grated coconut 2 bowl
Red Chilli powder 1 ½ tsp
Turmeric powder ½ tsp
Cumin seeds ¼ tsp
Garlic 4 cloves
Salt  to taste

Ingredients for seasoning

Coconut oil 2 tbsp
Red chillies  2
Mustard seeds  ¼ tsp
Grated coconut 2 tbsp
Pepper powder 1 ½ tsp
Curry leaves 2 sprigs

Method of preparation
Put red oriental beans into a pressure cooker and cook. When the pressure settles, put the sliced vegetables,4 tsp turmeric powder, ½ tsp red chili powder. Stir well. Add salt and pour some water. Cook till you hear 2 whistles.

Grind the grated coconuts, 1tsp chili powder, ¼ teaspoon turmeric powder, ¼ tsp cumin, 3 flakes of garlic and salt to make a paste.

When the pressure settles, add this paste into the cooker and cook.

Now splutter red chilies, mustard, curry leaves, pepper powder and grated coconut in oil. Remove the contents from the pressure cooker into a bowl. You may now transfer the seasoning from the pan into the bowl.
