Olan

Ingredients

Soaked red oriental beans 1 bowl
Ash gourd/ Pumpkin pieces  1 cup
Green chillies (split)   6 nos
Coconut milk (first milk)  1 cup
Coconut milk (second milk)  2 cups
Yardlong beans   2 nos
Curry leaves  2 sprigs
Coconut oil  2 tbsp
Salt  to taste

Method of Preparation

In a cooker, cook red oriental beans. Put the sliced ash gourd, string beans and green chillies into it. Stir a bit and pour some water and salt. Cook till you hear a whistle.

When the pressure settles add the second milk of coconut and boil it. Then add the first milk of coconut and boil it again. Pour some oil and then add salt and curry leaves. Stir a bit.

The Olan is ready to delight your taste buds!
