Puli Inji


Ginger  1 cup
Chilli powder  ½  tsp
Fenugreek powder  ¼ tsp
Aseofodia powder   ¼ tsp
Tamarind pulp  1 cup
Jaggery syrup  1 cup
Salt  to taste
Mustard seeds  ¼ tsp
Curry leaves   2 sprigs
Oil  as needed

Method of Preparation 

In a pan heat oil and fry ginger pieces till turns the brown colour. Keep it aside. Heat another pan and add powders of chilli, fenugreek powder, aseofodia powder and fried ginger. Sauté well. Now grind it to the fine powder. 

In a pan heat oil seasoned it with mustard seeds, red chillies, and curry leaves and add fried ginger powder. Sauté well. Now add tamarind pulp and allow it to boil. Once the gravy is mixed add jaggery syrup and boils it. 

Puli Inji, one of the inevitable dishes of Kerala Sadya, is considered to be very good for digestion.
